Domaine Dubuet-Boillot produces old vine cuvées of both village appellation Pommard – 55 years – and village appellation Volnay - 60-65 years. Both are blends of two parcels.
100% Pinot Noir from two geologically opposed terroirs, Les Poisots, with its rich, clay soil, and Les Lambots, with its poor, predominantly limestone soil. Harvested by hand, with a 5-day difference between the two terroirs, to obtain the same degree of ripeness.
Vinification: 80% de-stemming, blend the juices during fermentation, pressing, 14 months of aging in French oak barrels, with 30% new oak.
The fruity aroma explodes, super invincible. The intensity is fuller than Volnay, and the aroma in the middle and back sections is richer and more gorgeous. It has a jam-like aroma that is concentrated but not heavy. The acidity is well-balanced, very balanced, and the structure is full.
Recommend decant for 2 hours before consuming.
