WINEMAKING PROCESS

Bibi Graetz’s innovative approach defines this wine. The 2024 vintage undergoes gentle pressing and cool fermentation in stainless steel to retain aromatic purity. No malolactic fermentation ensures crisp acidity, with brief lees aging adding subtle texture, creating a refreshing, fruit-driven white with immediate appeal and balance.
