JL Vergnon 是一家位於香檳區白丘名村Le Mesnil-sur-Oger 的小酒莊,在2012年成為NM、即可向其他葡萄農購入葡萄進行釀造,但產量仍然極低。
在釀造上也頗有想法,在多數香檳莊都進行乳酸發酵及添糖削弱酸度的現在,JL Vergnon 仍然以不銹鋼槽發酵基酒以隔絕乳酸發酵,瓶內二次發酵時間最少為三十六個月,除渣後的添糖量亦非常少。如此保留了相當利落的酸度,乾淨的口感,且更能反應風土特性。
是次介紹的MSNL 酒款,僅採用特級村Le Mesnil-sur-Oger 的兩塊葡萄田,100% Chardonnay 釀造。二次發酵瓶陳時間長達7年,添糖僅3g/L。酒體相當乾淨精細,帶清晰的白花和青檸、青蘋果、檸檬的果感。口感清澈,毫無雜質,酸度漂亮有力,充滿活力。礦物感相當典雅,以一點烤杏仁、酵母作點綴,收結微鹹。是一款風格纖巧精細,忠於風土的作品。
JL Vergnon is a small champagne house located in the prestigious village of Le Mesnil-sur-Oger in the Champagne region. In 2012, it became a "Negociant Manipulant" (NM), meaning it can purchase grapes from other vineyards for winemaking, although its production remains very limited.
In terms of winemaking philosophy, while many champagne houses nowadays carry out malolactic fermentation and sugar dosage to soften acidity, JL Vergnon still ferments its base wine in stainless steel vats to isolate malolactic fermentation. The minimum time for secondary fermentation in the bottle is thirty-six months, and the dosage after disgorgement is very minimal. This approach preserves a crisp acidity, clean taste, and better reflects the terroir characteristics.
The MSNL cuvée we are introducing here is made exclusively from two vineyards in the premier village of Le Mesnil-sur-Oger, using 100% Chardonnay grapes. The secondary fermentation in the bottle lasts for 7 years. Dosage is 3g/L only. The wine has a clean and refined body, with distinct notes of white flowers, lime, green apples, and lemon. The palate is clear, free from impurities, with a beautiful and vibrant acidity. It exhibits an elegant minerality, with subtle hints of toasted almonds and yeast, and finishes with a slight salinity. It is a delicate and refined style that stays true to its terroir.
