As well as being assistant winemaker at Domaine Remoriquet and a future star of the Burgundy winemaking scene, young Maxime is also the grandson of Volnay’s Pierre Boillot and nephew of the current head of that Domaine. Maxime, however has his own ideas and has been producing excellent wines of his own, using fruit purchased through family and friends in the trade. The Volnay Sur les Roches comes from 60 year old vines situated near the border with Pommard and is a lovely example of a village Volnay.
This red wine is a single-vineyard wine from the village of Volnay. It is also a very successful and famous work of Maxime. The flavor expression is more precise, and you can feel the details of his expressing the terroir of Volnay. Continuing the elegant and graceful floral aroma of Volnay, the fragrance of fresh roses when first opening the bottle is full of translucence, even a bit budding. The tannins are as delicate as petals, and the berry flavor will gradually develop as the wine is sobered up for a long time.
After opening the bottle for about an hour, the rose jam, strawberry and black cherry are rich and energetic on the tongue, and the acidity is quite bright.
