酒莊僅從4000公斤的葡萄中提取1800公升的汁液,比起香檳普通標準的2550公升、甚至Cuvee 標準的2050公升還要少,酒莊以此提高了汁液的品質,當然也就犧牲了產量。
另外採用自然靜止沉淀的方式去除汁液中的葡萄殘渣,因為酒莊認為所有物理和化學做法都有損汁液的香氣和口感。
發酵後,部分酒液會經乳酸發酵,使口感趨向柔和,再和未經乳酸發酵的酒液調配,以求達到酒莊想要的平衡質感。
像此作BdB Vintage,其部分原酒更會先於木桶陳年,再調和入瓶作二次發酵,時間至少四年。
經過如此講究的釀造,更是香檳著名的2012年份,100% Chardonnay,售價和Ruinart BdB NV 相差無幾。
香氣上是標準的黃色水果、熟檸檬、白桃、青蘋果等,同時略帶像是杏脯的深度,酵母感相當細緻,像是一點點奶油麵包,口感較為圓潤,微礦物感,味道平衡。
