有別於Aszu 的兩段式釀造法，Late Harvest 是將收成日延後、葡萄未必全部染上貴腐菌，但至少糖分充分濃縮，然後正常地釀造出甜白葡萄酒。做法類似法國Bordeaux 的Sauternes。

 

同時，其陳年時間通常較Aszu 短。

 

較低的糖分和熟成時間，令Late Harvest 比起濃郁飽滿的Aszu 保留更多的清爽風味，如檸檬、橙皮和清新花香，香氣更見芬芳，口感也較輕盈。
